This excellent Colombian coffee from Tolima is produced by the Associación De Productores De Café Especial La Orquidea (Asoprocafees) a cooperative of 55+ members with an average farm size of 3-5 hectares. With their Far Trade Organic (FTO) certification they generate higher prices for their members who then use profits to improve coffee processing infrastructure and invest the Fair Trade Social Premiums of approximately 20 cents per pound to expand community social programs. The coffee is selectively handpicked, pulped on the individual farms, fermented overnight and fully washed in clean water. The parchment is then dried on patios or raised drying beds on the roofs of their homes. While drying, the coffee is raked frequently to ensure even drying.
These large Excelso graded beans insure that they are some of the best Colombian coffees for export. They are also rated as European Preparation (EP) and specify that the raw beans are all hand sorted to remove any defective beans and foreign material.
This overall, well balanced coffee exhibits medium body and a bright, slightly tangy acidity. It has a mild honey-like sweetness and cocoa powder undertones that compliment the acidity and contributes to the depth of the flavor profile. Best roasted to a Medium or Medium-Dark profile. An excellent and versatile everyday coffee!
