Manuel Tzic (pronouned like sick with a slight t on the front) Saso has been a member of AProCafe Atitlan since the group’s inception in 2014, and has one of the highest farms in the association, sitting nearly 1000 feet above the shores of Lake Atitlan. Manuel’s farm is in the small village of Panyebar, which is part of the San Juan municipality, but about 1.5 hours from central San Juan by either car or a more direct footpath. He grows his caturra and bourbon coffee trees organically, under heavy shade. While in the past, Manuel has fully-processed his own coffee, this past year he depulped the coffee at the association’s new micromill in Panyebar (more efficient, with a better cherry floating system), then fermented and washed his coffee on-farm before drying on raised beds.
